Spanish Lasagna


I have such a hard time letting go in the kitchen. It is my special place a way from the kids and now they want in. It is great that they want to learn because then they know how to cook and it teaches culinary skills and math.  I love food from all parts of the world. My comfort food will always be my Spanish meals. 


This is my crazy lasagna that I made because my perfectly envisioned tortillas were made by my children. They made them a little to thick and not very round.   So I adjusted my smothered burritos to lasagna. Everyone loves that right?

 The ingredients:
Ropa Veja
Red chili sauce
flour tortillas
cheese 



I layered the ingredient. I started with the sauce which I learned after the first lasagna I made was very important. I don't think I am allowed to make traditional lasagna after that first time, somehow the pasta baled and became hard, it was pretty bad. After the lasagna is layered you put it in the oven and cook it until heated through.


Then after it is done cooking top it with guacamole, salsa, sour cream and anything else you want. I think this will be the only lasagna I will ever be allowed to make again.

Salsa over eggs

I am not a breakfast person and it is hard for me to be thrilled at breakfast stuff. Seriously my breakfast is allergy medication and a cup of coffee. I am not a fan of bacon (I know I am losing someone over this) but trying the organic it taste better. Seriously the organic and natural stuff is amazing!!
Well this week I have been working hard on good habits with my kids so I am trying to break my bad habits too. This morning while my sons were doing speech therapy I made eggs over hard with fried salami ( not a huge fan but its was in my fridge). The best part of the eggs was the fresh made salsa. See its not just for chips. I am hoping to start add more ideas since I got rid cereal.

Market fresh salsa



I think it is closer to pico de gallo than salsa but in America the two mean almost the same thing.  When we were at the market I bought a huge collection of beautiful tomatoes and jalapeños. We even found red snapper and I knew what was for dinner.  The spanish in me will never go away but because it is May in New York and spring has not made it yet I had to do some minor adjusting in my seasoning but you can not even tell. It was fresh and amazing.

Ingredients:
6 medium tomatoes
1 jalapeños
1/2 an onion
3 tablespoon dried cilantro
juice of 2 lemons
Cumin salt seasoning to taste ( I know whats that right? My own salt blend that I will write about later)



I finely diced everything but you need to be careful with the jalapeños. If you feel more comfortable with rubber gloves by all means use them. My husband could share an interesting story thanks to the oils in jalapeños. I use the seasoned salt to taste. Let it rest because that is when the flavors come out. Enjoy!!
